ASIAN SLAW WITH GINGER-PEANUT DRESSING
Crispy and delicious! This makes a great light meal!
I quartered this recipe for my family for a side salad.
1/4 cup honey (that's 4 Tbsp in case you're dividing it down!)
1/4 cup oil
1/4 cup unseasoned rice vinegar (or whatever you have!)
1 Tbsp soy sauce
1 tsp sesame oil
1 Tbsp peanut butter
1/2 tsp salt
1 clove garlic, minced
1 Tbsp fresh ginger, minced
4 cups shredded cabbage or coleslaw mix
2 cups shredded carrots
1 red pepper thinly sliced into bite sized pieces
1 cup edamame, cooked and shelled
1/2 cup fresh cilantro loosely packed, chopped
1/2 cup salted peanuts (op'n)
Mix the first set of ingredients together for the dressing - warm a little just so peanut butter mixes in.
Mix together the slaw part and stir in dressing.
Refrigerate 20 min or more.
RAW VEGAN TACO MEAT!
I know that sounds outrageous but its delicious - even my carnivores like it!
2 cups raw walnuts
2 Tbsp soy sauce (or tamari)
1/8 tsp chili flakes
1 tsp ground cumin
1 tsp oil
Put this all in the food processor and pulse just to mix - don't overblend or you end up with spicy walnut butter!
Curried Apple Turkey Rice Roll
I had some leftover turkey dinner and created this! Its great meal with a salad!
1 apple, diced (preferably a crunchy apple)
1/2 onion, diced
1/2 - 1 tsp medium yellow curry
1/2 - 3/4 tsp cinnamon
1/4 cup leftover gravy
dash of cayenne (optional)
1 cup (or more) diced leftover turkey
1 cup cold mashed potatoes chopped up
7-8 large round rice wrappers
Saute apple, onion and spices in the gravy. (add a bit of water if it gets dry)
Add the turkey and chopped mashed potato and stir well.
Soak Rice Wraps until soft and lay them out on the counter.
Divide the filling between them. Roll them like egg rolls (fold in the ends so the filling stays in)
Spray a cookie sheet with vegetable oil and roll each roll up in the oil.
Bake at 400' (on convection if you have it - if not you'll have to flip them more and rotate) - flip once. Cook for 20-30 min. until they're browned and crispy.
TASTE ALTERNATIVE: You can fill this roll with anything! My kids love tuna Dijon mustard and chopped onion! 1 can makes 3-4 wraps.
LEMON CHILI-GRILLED SHRIMP SALAD
the ingredients except for the oil. Slowly stream in oil and stir until
completely emulsified. Set aside.
season both sides generously. When your coals are nice and white, gently cook the shrimp and tomatoes. You're shrimp will only need about 2 minutes per side. The tomatoes are ready when the've softened and are nicely charred.
Our go to for delicious soup !
1 lb ground beef, suteed,
2 cups spiced chili beans (Or 1 pk frozen veggie chili)
2 cups kidney beans (or black beans)
1 can corn (or frozen
1 cup marinara sauce
1 cup water
2 Tbsp taco spice
Mix it all and simmer 1/2 hr.
serve with taco chips and guacamole! (and sour cream & cheese if you want)
