CINNAMON NUT CLUSTER GRANOLACereal without sugar is not so exciting. In our gluten free period we discovered these wonderful gluten free - sugar free "granola" like cereals.
2/3 cup sliced almonds 1 1/3 cup other nuts chopped 2/3 cup almond flour (ground almonds) 1/3 cup ground flax 1/3 cup hemp hearts 2 Tbsp cinnamon 1/4 cup coconut oil melted 1/4-1/2 cup honey or agave nectar Mix everything. Spread on a large baking sheet o parchment paper. Bake 15-20 min. at 300' Allow to cool then break into chunks. Store in a sealed container at room temperature. CHOCOLATE GRANOLADelicious, chocolaty and it makes your "milk" turn chocolaty too! 2 cups old fashioned rolled oats 2/3 cup nuts / coconut 2 Tbps melted coconut oil or vegetable oil 1/4 cup honey 1/4 tsp salt 3 Tbsp unsweetened cocoa powder 2 Tbsp water Mix all rolled oats and nuts. Mix rest of ingredients in a pot or microwave dish. Warm to melt and mix well. Pour the wet ingredients over the dry ingredients and mix well. Spread on parchment lined baking sheet (about 1/2 thick) Bake 45 min at 300'. Remove from oven and press granola down firmly. (this will give better clusters) Allow to cool and then crumble it. Store in airtight container at room temperature. NOTE: I just made this again and mixed up these 2 recipes by accident! Used 2 c oats, 1+ c nuts, 1/3 c ea hemp hearts, sesame seeds, 2 T cinn (plus 1 t nutmeg), 1/4 c coconut oil, 1/2- 2/3 c xylitol icing sugar, 2 T apple juice. The added nuts and seeds will lower the glycemic effect, and the xylitol will lower the sugars. |
