KETCHUP - BBQ SAUCELife without ketchup is nearly impossible especially when you have little ones! When you first make this ketchup its -well not great - but after chilling a day or two it improves greatly!
6 oz can tomato paste 1/4 cup honey or agave (or 1/8 cup honey plus 3 scoops stevia) 1/2 cup white vinegar 1/4 cup water 3/4 tsp salt 1/4 tsp onion powder 1/8 tsp garlic powder Mix it all up - you can store inside a glass Mason jar or reuse an old ketchup bottle NOTE: DO NOT taste this until it has been refrigerated for 24 hrs! It will taste tinny and tomato-ey and gross! Give it time!!! For BBQ sauce – make this – add a fair bit of steak spice or Montreal chicken spice; liquid smoke; (and a touch of molasses if that little amount of sugar is tolerated) COOKED BBQ SAUCEI made this for pulled pork and it was delicious!
The inspiration came from http://allrecipes.com/ Big Al's KC BBQ Sauce Here it is with my changes: 2 cans hunts tomato sauce (398 mL each) (or other s/f sauce) 1 cup raspberry vinegar (or wine vinegar, or ACV) 1 cup sweetener (I used 1/2 cup each coconut sugar and xylitol) 1/2 cup molasses (scant) 1 tbsp. hickory smoke 1/8 tsp creole seasoning (or more) 1 tsp paprika 1/4 tsp cinnamon 1 tsp pepper 2-3 tsp fresh or frozen garlic 1 1/2 tsp salt 1/4 tsp baking soda 3 mini scoops stevia (equivalent to 2 Tbsp sugar) 1 whole onion quartered Simmer all ingredients for 1-2 hrs. Remove the onion and bottle. STIR FRY SAUCE3 parts honey
2 parts oil 2 parts sugar free soy sauce 8-10 shakes fish sauce thicken with 2 Tbsp cornstarch mixed in 3 Tbsp cold water. Honey Garlic Ribs1/2 cup honey 1/4 cup soy (make sure its all natural GF and Sugar Free - Kikoman has a good one!) 1/4 cup vinegar 2-3 cloves garlic, minced 1 tsp baking soda These are best if you marinate the pre-boiled ribs in the sauce for a while before you cook them! Bake 1 hr at 350' turning and basting every 15 min. |
EASY SUGAR FREE SALSA!No! I do not have time to chop fresh tomatoes and simmer, and bottle... I make salsa as I need it - it takes very little time!
1/4 c sweet onion 1/4 cup red onion 1 jalapeno seeded (or throw in some hot sauce to taste!) 1 tbsp. cider vinegar 2 Tbsp cilantro / parsley 1 red pepper 1 clove garlic 1 tsp cumin 1/2 tsp salt 1/2 can no salt added stewed tomatoes Put everything in the food processor except the tomatoes. Pulse until it looks as chunky as you like (almost!). Pour in the tomatoes and pulse once or twice until its perfect. Pour it in a jar and refrigerate. CHICKEN MARINADEA delicious marinade for chicken breast - or to baste a chicken or turkey (I bet its good for fish too but haven't tried yet!)
1/4 cup vinegar 3 Tbsp mustard 3 cloves garlic, minced 1 Tbsp Orange Juice concentrate 1/2 Tbsp lemon juice 1/2 cup honey 1/2 tsp salt 4 Tbsp oil This is enough for 6-8 chicken breasts. Marinate for 2-12 hours. Grill until the chicken is cooked. Teriyaki SauceYES you can have teriyaki beef!

Use this to marinade the ribs (after boiling and rinsing) overnight or more. Bake at 300' for 1 1/2-2 hours in the sauce/marinade |
