OAT PULP RECIPES
Oat pulp is what is left over when you make oat milk! I make oat milk to use in recipes since it is much less expensive than buying almond milk for everything!

Leftover Oatmeal PancakesIts easy to cook your oatpulp to use it as oatmeal! You can eat it that way or use it in recipes!
To cook: Add 50% of the volume in water and microwave 5-7 minutes. (so 1 cup oat pulp plus 1/2 cup hot water will make 1 1/2 cups oatmeal) http://smittenkitchen.com/blog/2010/05/oatmeal-pancakes/ 3/4 cup oat flour 1 cup flour or buckwheat or quinoa flour 2 Tbsp coconut sugar 2 tsp baking powder 3/4 tsp salt 3 Tbsp melted margarine 1 1/4 cup milk (or non dairy substitute) 2 eggs (beat into the milk) 1 cup cooked oatmeal Mix dry ingredients. Add wet ingredients and stir. (leave some lumps) Cook on medium heat griddle in margarine or butter or oil so they don't stick and so they get nice and crispy! Serve hot! I think they'd warm well! NOTE: I haven't tried this recipe yet - next week! |
Oat Cookies / DonutsThese cookies are a bit cake-like so they make great donuts (in a donut pan) or donut holes (in a mini-muffin tin)
1 cup coconut sugar (or brown sugar) 2/3 cup margarine 2 eggs 1 cup buckwheat flour 1 cup whole wheat flour (or quinoa flour) 1/4 tsp baking soda 1 tsp salt 2 tsp cinnamon 1/2 tsp nutmeg 1 cup oat pulp - then add 1/2 cup water and cook 5 min in microwave (this should make 1 1/2 cups oats) Raisins - nuts - chocolate chips... Whip the sugar and margarine. Whip in the eggs. Add all the dry ingredients and the cooked (and cooled oats). Mix well. add nuts etc if you want them. Scoop onto cookie sheet and flatten *unless you want round balls! or use 2 cookie ball scoops to fill a donut pan donut space. Or one scoop each into mini muffin tins. Bake at 375' for 10-12 min until set but not dry. you may brush with margarine and sprinkle with cinnamon sugar if desired (or if you have balls - toss them in a bag!) |
