1 can artichoke hearts pureed with 1 avocado
1/4 lb bacon cooked with1 Tbsp garlic
1/2 bag spinach
2 cups dry pasta, cooked
Cook the pasta.
Mix the artichoke - avocado with the cooked bacon and garlic. Add the spinach and simmer just to cook the spinach. Serve over the pasta.
ITALIAN SAUSAGE PASTA BAKE
I was feeling like having lasagna - but didn't have GF lasagne noodles. Saw this recipe and tried it. The recipe posted below has my changes.
454 g dry brown rice macaroni (or other shape) pasta, cooked
500 g Winkler Farmer Sausage (its GF, dairy free and mostly sugar free)
2 garlic cloves, minced
1/2 teaspoon dried basil
1/4 tsp. crushed red pepper flakes
1 jar spaghetti sauce
1 cup cashew ricotta
2 cups fresh spinach, chopped
1 tsp salt
Cook the pasta according to package directions. Drain.
Chop the sausage and cook in a frying pan with the garlic. Add the basil, red pepper flakes and cook. (I didn't drain because there wasn't a lot of fat and it just adds flavour, but drain it before adding spices if you need to)
Stir in the spaghetti sauce and pasta.
Mix the cashew ricotta with the chopped spinach and salt together well.
Grease a 9" pan put 1/2 the pasta in the bottom.
Use your fingers and crumble the "cheese" mixture on the pasta. Top with the rest of the pasta.
Bake at 350' 45-60 min.
