Food is such a part of life. Its how we celebrate, how we share, how we fellowship ad how we reward ourselves. Life without cane-sugar need not be any less exciting, rewarding or tasty and you do not need to feel cheated!
Our journey began when I started to notice how sugar dependent I was coming. I was seeing concerning behaviour from my
children but I didn't know it was caused by sugar until we were forced to take all the cane sugar from our diet. All of it - cold turkey - for 6 weeks. (and gluten, dairy, and egg too!) By this time I had played with reducing sugar and using more natural sugars but I wasn't committed.
When my daughter's health became a priority we chose a new route to health and began with an elimination diet. Dairy is definitely an allergy in my family - we know now - so we have pretty much eliminated dairy. I have also discovered how great life can be without cane sugar. Its not easy but we see a difference in our mood, energy levels and anger levels! Now we are on a quest to keep cane sugar out of our lives.
At this point in our journey we are mostly eating completely dairy free, and serving my daughter a gluten free, low glycemic effect diet . These first recipes are nearly entirely gluten free, egg free, dairy free and sugar-cane free!

HOW TO SUBSTITUTE NATURAL SWEETENERS
FOR COOKING AND BAKING
1. USE LESS: Honey and maple syrup are sweeter than sugar so use about 1/2-3/4 for each cup of sugar.
2. REDUCE LIQUID if substituting a liquid for a dry sweetener: for each cup of honey subtract 1/4 cup liquid from the recipe (for each 1/4 cup of honey subtract 1 Tbsp of liquid) (or reverse all this if you're using a dry ingredient instead of a liquid one!)
3. REDUCE TEMPERATURE - honey and maple syrup scorch faster so reduce oven temperature by 25' F
4. ADD EXTRA LEAVENER: honey and maple syrup are acidic so add 1/4-1/2 tsp baking soda per cup of honey or maple syrup.
