HOMEMADE MAYO - Yes - You CAN!Super simple 2 minute mayonnaise with an immersion blender!! Its a little bit lemony for my taste so I reduce the lemon a bit
http://www.seriouseats.com/recipes/2011/10/two-minute-mayonnaise.html RASPBERRY VINAIGRETTEHere's what to do with that great raspberry vinegar!
1/2 cup oil 1/2 cup raspberry vinegar 1/3 cup or equivalent sweetner (honey, agave, stevia) - this is optional! 1/2 tsp spices if you want - oregano, pepper, Dijon mustard, or Victorian epicure vinaigrette spice! You may need to heat the oil and honey to get it to mix - then add the vinegar and shake well. If you keep it at room temperature it will stay combined better. CREAMY CAESAR DRESSINGThis does have mayo - so its a cheat for my daughter (but she doesn't like Caesar anyway!)
1 cup "milk" 1/2 cup mayo 3 lg cloves garlic 3 Tbsp lemon juice 1 Tbsp Dijon mustard 1 tsp Apple Cider Vinegar 2 Tbsp nutritional yeast 1/2 - 1 tsp Worcestershire sauce 1-2 Tbsp ground chia Mix well - refrigerate. The chia will thicken it so if its not thick enough for you just add a bit more. |
RANCH DIPUse your homemade ranch spice (on the Spice Mix page) to make your own ranch dip / dressing!
Mix 2 tsp Ranch Spice (see the Spice Mix page) 3/4 cup mayo (or greek yogurt if you're egg free but not dairy free) 1 1/2 tsp lemon juice 1-4 Tbsp of milk or milk substitute (to the thickness you prefer) When you mix this - note that it will thicken a bit as the moisture is absorbed into the spices! Refrigerate for 30 - 60 minutes before eating! THAI SWEET CHILI DRESSINGI developed this recipe to copy the Tony Roma's Thai Noodle Salad!
